Our passion for fresh bread is the soul of our success. Bread-making is an art form to us, which is why we allow our handcrafted bread to rise slowly, taking 16-24 hours. We never use additives or preservatives and all of our bread is baked at each Wildflower location daily.
Our natural starter originated in San Francisco and continues, with our care, to begin the process of artisan bread making. We use starters each day to mix a variety of dough, adding anything from grains and seeds to fresh herbs and fruit. Once the dough is mixed, we give it time to ferment; this gives bread a web-like cell structure or what some know as bread’s “holes”.
Artisan bread like ours is shaped by hand. Some of the basic shapes are rounds, ovals, batards and baguettes. Our bread is shaped at our Central Commissary and transported by refrigerated trucks to our restaurants. Refrigeration stops or retards the bread-making process momentarily. Once the bread safely makes its way to each location, the process continues.
In the early hours of each morning, our bread has had enough time to rise and is ready for baking. Loaves are baked directly on the hearth floor in imported deck ovens. During the baking process, steam is infused into the oven to give the bread its shiny appearance and hard crust. Hours later, customers walk in to find our freshly baked bread at the end of an almost 48-hour process!
When it comes to bread-making, our commitment is not simply to excellence, but to the preservation of a true art form. Our award-winning recipes attest to the fact that we take pride in every loaf of bread we produce. It is a time-honored process we not only enjoy, but one we hope our customers think is well worth it.
All of our breads are made naturally without any additives or preservatives using the finest ingredients.
